REFOŠK


Refošk is an autochthonous red wine sort from southwest Istria. It's a symbol of Istrian tradition and a unique wine that can't be reproduced in any other wine district; dense, dark red, almost black with distinct purple shades and with a full and rich flavour, it's a perfect companion to a richly set table.


The richness of minerals, polyphenols, acids and other substances in Refošk are good for our health and can strengthen and stimulate those who consume it moderately.


Refošk is most often known as a fresh wine, to be consumed within the first year. However, it is also possible to produce Refošk wines that gain on their aroma and worth with aging and thus excite with their intense and complex smell and flavours. These are the kinds of Refošk wines that we strive to produce in our cellar. The most delicate part in the production of Refošk is maceration and in our production we still do it as our ancestors did. The must is kept in open containers and is mixed manually by pushing down the cap that forms on the top from grape skins and seeds every two to three hours so that the ripe grapes release as much colour, polyphenols and mineral substances as possible. When maceration is done the wine is decanted into wooden barrels where it stays until ripe.

ISTRSKA MALVAZIJA


Malvazija is the main white variety in the wine district of Koper.


It isn't an autochthonous sort but it's been present here since time immemorial and it's the leading white variety on the entire Istrian peninsula. Although the wine district of Koper is known and renowned as a red wine district, Istrian Malvazija, with its warm and sunny character, best reflects and expresses the Mediteranean temperament of the district. On average harvests and with appropriate cellaring Malvazija gives very pleasant, aromatic, and mineral wines. Selected vintages can easily reach up to 15 % alcohol, which gives them a perfect basis for a longer maturation.


After a shorter maceration and controlled fermentation our Malvazija matures in stainless steel wine tanks.

CIPRO


Cipro belongs to the Red Muscat family. Due to its distinctive aroma of roses it's called Muškat ruža in Croatia and Muscato Rosa in Italy.


It belongs among the oldest vine sorts in the world. When ripe, the grapes reach extremely high levels of sugars which can't be fermented by the yeast, so our ancestors called it liqueur wine. It was grown to be mixed with the Refošk sold in Vienna to reduce its sourness but after the First World War, with the end of this trade route, also the cultivation of Cipro slowly disappeared. Cipro was rediscovered when wine-growers started to become more interested in older vine sorts. Since then, year after year, Cipro has been gaining on popularity and is recognized more often. It has also earned its rightful place among the special wines of the wine district of Slovene Istria.


The intense aroma and mixture of various flavours that even though are so different are also very well connected and thus provide an unforgettable experience for our taste buds. It can be served on all occasions and it will excite both lovers of sweet and dry wines. It is suitable as an aperitif or digestive but it also goes perfectly with fruity and chocolate desserts or with strawberries, cherries and forest fruits.
